Amphiphilic properties

Molecules containing hydrophobic (blue) and hydrophilic (orange) regions are called amphiphilic.

Amphiphilic molecules facilitate the mixing of hydrophobic substances with water and are used as emulsifiers or detergents. They can form vesicles or extended bilayers (membranes). Two fatty acid molecules are shown here as typical examples.
